I have never made Gluten free cookies but there is always a first, I was a bit skeptical if they would work or not, and would they live up to the cookie dream of being crispy? gooey? soft? chewy? or just god damn rock hard! I used Becky Excell recipes and she is the queen of anything GF, her recipes are through, in-depth and knowleadgeable, she is a great GF baker.
Well this recipe didn’t dissapoint they were amazing, soft and crispy and just overall tasty. I added I paired the cookies with pistachios to give the cookies different textures and have pockets of green colour through it. I do love pistachios and it works so well with chocolate don’t you think?
As these turned out so well, it will be mine go to recipe for gluten free cookies!
