If you are like me and love Marks and Spencers shortbread as they have a good amount of chocolate, rich buttery-tasting shortbread, that just melts in your mouth, then you will love these. In general, the addition of chocolate in any recipe always makes it taste so much better.
I struggle to get shortbread right and have tried a number of recipes, sometimes it is just crunchy, other times it’s just not buttery, and then most disappointedly they spread out too much argh!!!
Well, this recipe seemed to tick all the ‘issue’ boxes, they were easy to make and tasted great.
Chocolate chunk shortbread
A delicious buttery shortbread filled with chocolate chunks
Ingredients
- 225 g 225g – Butter
- 115 g Sugar plus 2tbsp extra for sprinkling
- 320 g Plain flour
- 90 g Chocolate chunks
Instructions
- 1. Preheat the oven to 160°C and line a 7” square tin.2. In a bowl add the butter, sugar and flour, crumble the mix with your hands until combined. Then add your chocolate chunks and combined again.3. Places the mixture in your lined tin and press down firmly.4. Bake for 25-30 mins until you see slight brown on the sides.
