These are right up my street, anything with Peanut butter and Chocolate always makes me happy. Also, the other bonus to making muffins is they are quick and easy to make.

I love the swirl at the top and the fact that the recipe also called for adding peanut butter to the batter therefore that peanut butter taste through and through!

It’s essential to use that runny type of peanut butter as the thick kind just wouldn’t be able to mix well.

Peanut Butter & Chocolate Muffins

Ingredients
  

Dry Ingredients

  • 290 g Flour
  • 240 g Sugar
  • 50 g Cocoa Powder
  • 3 tsps Baking Powder
  • 1/4 tsp Salt

Wet Ingredients

  • 315 g Milk
  • 65 g Oil
  • 65 g Runny Peanut Butter
  • 1 tsp Vanilla Extract

Topping

  • 85 g Peanut Butter runny (12 teaspoons)
  • 50 g Chopped Chocolate

Instructions
 

  • 1. Preheat the oven to 160°C and place 12 muffins liners in a muffin pan.
    2. In a bowl place all the dry ingredients – Flour, Sugar, Cocoa powder, Baking Powder & Salt. Whisk and set aside.
    3. In a jug place all the wet ingredients – Milk, Oil, Peanut Butter and Vanilla. Whisk until smooth.
    4. Make a well into the dry ingredients and add the wet ingreidents. Mix until combined don't over mix.
    5. Scoop the mixture into each muffin case and distrube evenly.
    6. Place 1 tsp of peanut butter on top each muffin, then using a toothpick or skewer to swirl the peanut butter, place some chopped chocolate on top
    7. Bake for 20-25 minutes. Then leave to cool.
