If you know me, you would know how much I love peanut butter.

Well, actually peanut butter and oats are two of my favourite things. I have some sort of addiction to both of them and they actually make a great combination. I’m always making bars out of them, anyway, I digress, also another perfect combination is peanut butter and chocolate, these two make the perfect pairing.

I have had Reeces cups on several occasions but this time I thought I would make them myself (minus all the e-numbers and junk that’s included) and alleviate it with some texture and crispiness. I’m not sure if you’ve ever had the American chocolate Butterfinger but those have this amazing crispiness to them which I love.

To add that texture, I added some crushed cornflakes so, this wasn’t your normal peanut butter cup, it was a crispy one 😉!

These can be quite fiddly to make and can take a bit of time BUT they’re worth it in the end. They’re also not too sweet so they are more of a healthier version compared to their original counterparts, which would make it OK to eat every day right?!

I used silicone cups which made it easier to hold their shape and to take them out but you could use normal paper cups however you may need to place them in a muffin tin so they would keep their shape.

If you’re a fan of coconut, I made coconut cups which turned out amazing.

Crispy Peanut Butter Cups

Crispy, peanuty and chocolatley cups

Ingredients
  

  • 170 g Chocolate melted
  • 100 g Peanut Butter
  • 100 g Cornflakes crushed
  • 100 g Honey

Instructions
 

  • Using siclione liner cases or paper cases in a muffin tin. Spread around 1-2 tbsps of the melted chocolate at the bottom of the cup and up the side.
    2. Leave to set in the fride whilst you make the filling
    3. In a bowl add the crushed cornflakes, peanut butter and honey, mix until combined.
    4. Taking around 2-3 tbsp of mixture form into a patty then place inside the chocolate cup case.
    5. Top with the addtional chocolate and make sure it's totally covered.
    6. Place back in the fridge to set for an 1 hour to set.
    7. Remove from the silicone case carefully.
