Gluten free Raspberry and lemon cheesecake

I’m really loving raspberries at the moment. They are sweet but tart and juicy, the flavour balance is so amazing. I made these for my parent’s anniversary and they were a hit. They are so refreshing, with the zesty sharp lemon and juicy fruity raspberries, both fruits worked really well together. Although they are cheesecakes and you would think they are quite heavy these were really light and are a great dessert after a heavy meal.

As per usual, I used my favourite queen of cheesecake Janes Patisserie for a recipe and like usual they were amazing! As I’m loving raspberries these were just so tasty and I really enjoyed them. They were especially great as it was a beautiful day and filled with delicious food so these topped the day off.

The recipe below has been halved and the original makes an 8″ cheesecake.
