This tart is so easy to make and doesn’t have any eggs in. It is quite rich tasting but adding pistachio and orange cuts out the richness slightly and gives it another element.

You can also add cocoa powder to the base of the tart if you wanted it to be be chocolately. Also you can add different types of nuts like hazelnuts, almonds or a mixture of a few. This is even better with some hot coffee and thick cream.

Biscuit base
  1. 150g - McVities Digestive biscuits
  2. 50g - ground almonds
  3. 50g - butter
  4. 1/2 tsp - cinnamon
Filling
  1. 200g - dark chocolate (if you prefer it too be slightly milky use half milk and half dark)
  2. 300ml - cream (I used double you can use single)
  3. Zest of 1 - orange
  4. 2 tbsp - cointreau (optional)
Topping
  1. Chopped pistachios
  2. orange zest
  3. 40gm unsalted butter
Biscuit base
  1. 1. In a thick sandwich bag add the digestive biscuit and with a rolling pin bash them into small pieces.
  2. 2. In a small saucepan add the butter and melt it then add the almonds and crushed biscuits.
  3. 3. Press this down into a lined baking tin, then chill whilst you make the filling.
Filling
  1. 1. In a medium saucepan heat the 200ml cream on simmer in a heavy bottom pan until bubbles begin to form on the edges. Add the chocolate and butter and use a balloon whisk to blend until the butter & chocolate have melted completely. Add zest of 1 orange and the remaining low fat cream {use about 3/4 first, then the remaining if required; the filling should begin to look thick but still pour able}.
  2. 2. Cool to room temperature, whisk again and pour into cooled tart shell. Smoothen with an spatula and chill for 4-5 hours, preferably overnight.
  3. 3. Garnish with freshly sliced strawberries just before serving.
Notes
  1. You can top the tart with whatever fruit or nut you like.
